CHAI RECIPE
1 cinnamon stick
1/2 tsp. whole peppercorns
1/2 tsp. whole cardamom
1/2 tsp. whole cloves
1/2 tsp. fresh ginger
10 oz. whole milk
1 tsp. sugar
1/2 tsp. loose black tea
Put first 5 ingredients in mortar and crush lightly. Put the milk in a saucepan. Add the crushed spices, sugar, and loose black tea. Heat to boiling and simmer for 20 minutes. Strain. Adjust to taste.
Yield: 1 cup.
